RECIPES







Quiche

1 small onion Chopped
3 garlic cloves Chopped
1 tblsp Olive oil
1 tblsp butter

Saute in frying pan  until tender  not brown.  
THEN add these chopped veggies and sauté about another 10 mins. (Set aside)
I used what I had in the house
Green/ red/ yellow peppers Half of each
Zucchini chopped Half
Asparagus chopped about 8 top half of the sticks


Another bowl mix together
3 eggs (beat with fork)
1 cup milk

In a separate large bowl 
Mix together
1 cup swiss cheese ( I used block and grated myself)
1 cup Pecorino Romano ( grated myself)
baby spinach 3/4 - a cup full chopped
3/4 cup flour
1/2 teaspoon baking powder
Salt and pepper
THEN add everything together  mix it well and pour into a 9 inch pie pan 
BAKE at 425 degrees for 25-30 mins.  Watch it so it doesn't burn,

I made it a few times with mushrooms, broccoli  and monetary jack cheese and white cheddar.
You can make it with whatever you want.

Skinny Cauliflower Tots

I found this great recipe on Kourtney Kardashian's blog. I love finding healthy alternatives to try.  Cauliflower roasted is amazing so these should be as well . Skinny Cauliflower Tots Ingredients (All Organic/Non-GMO products): 2 1/2 cups raw cauliflower florets (about 2 cups when cooked) 1 large egg 1 large egg white 1/2 cup onion, diced 1 tsp garlic, minced 2 tbsp fresh parsley, minced 1/2 cup Colby Jack cheese, grated 1/2 cup seasoned Panko breadcrumbs salt and pepper, to taste Instructions: First, cook the cauliflower florets by pouring 1/4 inch of water into a large pan over medium heat. Once the water is simmering, reduce the heat to low and add the cauliflower. Cover with a lid and let simmer for about 5 minutes. The cauliflower should be tender, but not mushy when done.
