Try these quick and easy cinnamon sugared mini doughnuts for light, pillowy and very doughnutty satisfaction!
Ingredients
- 1 1/2 c. all-purpose or unbleached flour
- 1/3 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 c. milk
- 2 tbsp. cooking oil
- 1/2 tsp. vanilla
- 1 egg
- 1/2 c. sugar
- 1 tsp. cinnamon
Instructions
Heat cooking oil to 375 degrees.
In large bowl, combine first 5 ingredients.
In small bowl, blend milk, 2 tablespoons oil, vanilla and egg. Add milk mixture to dry ingredients; stir with fork just until dry ingredients are moistened.
Drop by teaspoonfuls into hot oil, 5 or 6 at a time.
Fry 1 to 1 1/2 minutes on each side until deep golden brown.
Drain on paper towels. Mix sugar and cinnamon on a plate or a shallow bowl; roll warm doughnut balls in mixture. Makes about 3 dozen.
Notes: Use the smallest spoons you have and pull them out of the oil as soon as they turn golden. Ideally, cook them low and slow, in hot oil but not so hot that only the outsides brown.
Drain only briefly before rolling them in the cinnamon sugar. I used very fine caster sugar to make the cinnamon sugar.
