Greek Bruschetta



Ingredients
  • For the bread 
  • A bag of sliced baguette
  • 2-3 tbsp butter
  • For the topping 
  • 1 cup chopped spinach
  • 1/2 cup chopped mushrooms
  • 1/2 cup crumbled feta cheese
  • 1/8 cup chopped sweet peppers
  • 1/8 cup sliced olives
  • 1 tsp oil
  • 1 tsp garlic powder
  • A pinch of salt
  • For the drizzle 
  • 2 tbsp olive oil
  • 1 tsp crushed red pepper (Chili flakes)
Directions

  1. Smear the baguette slices with butter and grill them. Set aside.
  2. Keep them warm and crisp by placing in a preheated oven at 200°F.
  3. Heat a tsp of oil in a pan. Add mushrooms and sauté for about 2 min.
  4. Add the garlic powder, salt, spinach and the rest of the ingredients.
  5. Mix well. Turn off the heat. Set aside.
  6. Heat 2 tbsp oil and add the crushed red pepper (chili flakes) into it.
  7. When you are ready to serve, top the baguettes with the mixture. Set them onto a platter and drizzle chili oil onto them

Skinny Cauliflower Tots

I found this great recipe on Kourtney Kardashian's blog. I love finding healthy alternatives to try.  Cauliflower roasted is amazing so these should be as well . Skinny Cauliflower Tots Ingredients (All Organic/Non-GMO products): 2 1/2 cups raw cauliflower florets (about 2 cups when cooked) 1 large egg 1 large egg white 1/2 cup onion, diced 1 tsp garlic, minced 2 tbsp fresh parsley, minced 1/2 cup Colby Jack cheese, grated 1/2 cup seasoned Panko breadcrumbs salt and pepper, to taste Instructions: First, cook the cauliflower florets by pouring 1/4 inch of water into a large pan over medium heat.
